Ciabatta Yogurt Breakfast Sandwich

Only in your wildest dreams did you imagine putting yogurt on a breakfast sandwich… until now! Classic breakfast ingredients like egg and spinach are fancied up with ciabatta, provolone and greek yogurt and then spiced up another notch with Louisiana hot sauce. The Ciabatta Yogurt Breakfast Sandwich truly tastes like a dream.

 

Ingredients

1 ciabatta roll
2 tablespoons olive oil
2 large organic cage-free eggs
1 slice provolone cheese
2 tablespoons plain greek yogurt
1 cup spinach
Himalayan pink salt & pepper to taste
Louisiana hot sauce to taste

Directions

  1. Preheat oven to 400°. Halve ciabatta roll and drizzle 1/2 olive oil over open side. Toast in oven 5 minutes.
  2. Meanwhile, heat the rest of olive oil in a small skillet over medium heat. Add eggs. Break yolks with spatula. Sprinkle with salt and pepper.
  3. When eggs are almost done top with provolone cheese. Turn off stove and let cheese melt.
  4. Spread yogurt on ciabatta roll. Add eggs and spinach. Top with hot sauce.
  5. Enjoy!

To make this even more yummoh, try adding arugula in place of spinach.
