Caesar Salad With Chicken

Caesar Salad with grilled chicken is a classic. Whether you’re having it for lunch or a light dinner, it always his the spot. Our Yummoh spin uses Whole30 mayo and less olive oil than your standard recipe, but even with the savings in calories, it still has all the satisfying bold flavors you love.
Ingredients
1 tablespoon extra-light olive oil
1/2 pound chicken
2 garlic cloves, finely chopped
1/2 teaspoon salt
1 tablespoon anchovy paste
4 tablespoons Whole30 mayonnaise
2 tablespoons white wine vinegar
3/4 teaspoon pepper
3 tablespoons extra-virgin olive oil
3 hearts of romaine (with the 2 outer layers removed), cut into 1-inch pieces
Directions
- Place chopped garlic and salt on cutting board and mash into a pulp. Add pulp to large bowl.
- Chop 2 ounces anchovies. With a fork, mash into a paste. 2 ounces makes approximately 1 tablespoon anchovy paste.
- Add anchovy paste, Whole30 mayo (see how to make it here), white wine vinegar and pepper into bowl. Mix together with pulp.
- Using a wire whisk, slowly drizzle extra virgin olive oil into mixture. Continue whisking until olive oil has emulsified into dressing.
- Season chicken with salt and pepper to taste. Grill on medium high heat.
- In a large salad bowl, toss romaine lettuce and dressing. Top with chicken.
To make this dish even more yummoh, add 4 tablespoons grated Parmesan cheese and 1/2 cup croutons.
